Strawberries are in season now, just in time for Juneteenth! Check out this easy-to-make strawberry pie. You’ll wow all your guests with a delicious dessert while honoring the resilience of our enslaved ancestors at the same time.

Usually coupled with traditional African American foods, red foods and beverages are typically seen on Juneteenth holiday tables everywhere. Red, since it commemorates the millions of people who lost their lives before and after Emancipation Day. Red, reminding us never to forget from where and how far we’ve come as we celebrate the Freedom Day holiday.

This year spend less time in the kitchen and more time relaxing with family and friends. Sit down for a spell and enjoy some good old-fashioned strawberry pie!

Juneteenth Strawberry Pie

Ingredients

1 Single Pie Crust, Baked

4 Cups Fresh Strawberries, Hulled

1 Cup Sugar

3 Tablespoons Corn Starch

3/4 Cup Water

3 Ounces Strawberry Gelatin

Whipped Cream

Directions

  1. Combine sugar, cornstarch, and water in a saucepan. Whisk the mixture together until smooth. Bring mixture to a boil over high heat, stirring constantly. Reduce heat to medium, cook, continually stirring, for 2 to 3 minutes or until mixture has thickened. Remove from heat immediately. Stir in gelatin until dissolved. Refrigerate for 20 minutes until slightly cooled.
  1. Place hulled strawberries in a large bowl. Fold gelatin mixture into berries until all berries are covered. Spoon berries into baked single pie crust. Refrigerate until set.
  1. Top with whipped cream. Serve and enjoy!
