Last year we started Tasty Garden Goodness as a new addition to The Traveler. Our wish was to inspire simply great food ideas through sharing gardening tips and more. We hope you have enjoyed following along through the year.
To mark this first anniversary of Tasty Garden Goodness, we asked our readers for their best summer sharing recipes and the stories that go with them in the July Traveler’s edition. Then our judges took the time to review the recipes and stories to choose a winner. A big thank you to all of the readers who participated by sharing their favorites. We appreciate you all!
The best new sharing recipe was gifted by a reader who remembers the times when her family got together just to enjoy each other. Especially during the summer, whether at a barbecue, picnic, wedding, or some other event, there was always a special rice dish the family knew would be on the table and looked for with delight. The gatherings for this anonymous reader’s family would not be the same without this dish on the table. The recipe has been passed down through the years and simply carries the name ‘Fiesta Rice’. Try it with the nutmeg; it gives it a special kick. We hope you will enjoy this dish too!
Fiesta Rice
Ingredients

2 Cups Rice

2 ½ Cups Chicken Broth
2 Tbsp. Butter
½ Cup Black Beans

¼ Cup Diced Scallions
¼ Cup Diced Chives
¼ Cup Diced Yellow Onions
¼ Cup Diced Red Onions
4 Diced Fresh Garlic Cloves
½ Cup Fresh or Frozen Chopped Kale
1 Can (10 oz.) Rotelle Original Diced Tomatoes and Green Chiles (Mild)
2 Tbsp. Butter
1 Tbsp. Olive Oil

½ Tsp. Nutmeg
½ Cup Diced Fresh Tomato
Directions
- Cook rice and set aside.
- Boil chicken broth, butter and beans in large pot. Remove from burner. Add rice and mix.
- In skillet, brown next ingredients except nutmeg and tomato and add to rice mixture. Stir.
- Add nutmeg and tomatoes. Stir, transfer to serving bowl and serve.
