Diced Fresh Tomatoes
Chopped onion, bell peppers, green onion and jalapeño
Left over taco meat
(Any meat option is fine whether steak, chicken, turkey or ground beef)
(For vegan or vegetarian, use sliced white mushrooms)
A handful of diced potatoes
Shredded Cheese and Taco Sauce (optional)
In non-stick pan, sauté diced vegetables, meat and potatoes over medium heat until nice and hot. Season to taste. Scramble eggs into the mixture and cook until eggs are done. Remove the mixture from the skillet. Warm tortillas and fold in the mixture with cheese and desired sauces.
