Chicken Pestomato Delight

2 boneless, skinless chicken breasts, sliced thin

1 Jar Pesto

Smoked Gouda Cheese (or any great melting cheese)

Beefsteak Tomato


Lawry’s Garlic Salt


Parsley (fresh, minced or dried)

Grated Parmesan Cheese


Preheat oven to 375°. Prepare an 8×8 baking dish by lightly coating with cooking spray. Season chicken with seasoning salt (I use Lawry’s) & pepper. Place chicken in baking dish. Spoon pesto on chicken & brush to cover. I love Pesto so I use a lot! Lay cheese slices on top. Slice tomatoes 1/2” to 1” thick & layer on top of cheese. Brush lightly with EVOO & season lightly with salt, pepper & parsley. Sprinkle with Parmesan Cheese. Cover with foil & bake 25-30 minutes, or until chicken is done. Remove foil cover. Turn oven temperature to broil for about 5 minutes to lightly brown tomatoes & cheese. Remove from oven & serve with your favorite crusty or garlic bread & your favorite veggie or salad. Enjoy!
