The practice of tipping began in Tudor England. By the 17th century, it was expected that overnight guests to private homes would provide sums of money, known as vails, to the host’s servants. Soon afterwards, customers began tipping (To ensure promptitude) in London coffeehouses and other commercial establishments. (Wikipedia)
A little known fact about tipping: Tipping has a racist past as blacks were frequently “tipped” less than their white counterparts. Additionally, if an owner saw that a black waiter was tipped, they would refuse to them pay. Blacks were expected to accept tips due to their job being labeled as inferior and to give a white man tips would be an embarrassment (splinter.com). As the hospitality industry grew so did the more modern- day acceptance of tipping. These actions were prevalent in the Jim Crow and Prohibition era.
